NOODLES IN A COCONUT BROTH
serves 1
INGREDIENTS:
50g gluten-free noodles (rice, soba etc.)
1 cup broccoli florets
1 tsp toasted sesame oil
1/2 small white onion
2 tsp garam masala
1/2 tsp turmeric
1 can coconut milk
1/2 tbsp coconut aminos (or soy sauce if not gf)
2 tsp coconut sugar
1/2 tsp salt
HOW TO MAKE:
Add the noodles and broccoli to a pan of simmering water to cook for 5 minutes.
In a separate pot add the oil, onion, spices and cook for a few minutes.
Add the rest of the ingredients to the pot and simmer for a few minutes.
Drain the cooked noodles and broccoli, add to a deep bowl and cover with the flavourful broth.
Finish with black and white sesame seeds and a drizzle of extra sesame oil.
